SEITAN PULSE SAUSAGE/COLD CUt

Yield: approximately 24 ounces

Eco-Cuisine Vegan Seitan “Beef-Style” Quick Mix
Salt
Granulated Garlic
Smoked Yeast
Aleppo Pepper, granulated (or add 1 additional Tbsp Paprika)
Paprika
Red Kidney, Yellow Beans, or Navy Beans, cooked, drained and rinsed
Water

Pour Seitan mix into mixing bowl. Combine salt, garlic, smoked yeast, Aleppo pepper, and paprika and add to Seitan mix. Add drained beans to mixture and let set for at least 30 minutes and up to 4 hours. 
Add water to mixture and mix with paddle or by hand until mixture is hydrated and a dough is formed (about 30 seconds with paddle). The mixing will tear the beans apart creating a beautiful striation.
Cut dough into two portions and roll out to about 6½-inches long.  Tightly wrap with plastic, compressing dough into a round cylinder.  Wrap in foil and twist each end tight.  Steam until internal temperature reaches 170º F.  Alternatively, press dough into an oiled mold no more then 1½ - 2 inches deep.  Cover with plastic to prevent water from entering, and steam until internal temperature reaches 170º F.
Slice and serve with toasted bread.
